Marisa's Tip of the week
I am currently in Mexico and it is always when traveling that I realize there are SO many different ways to cook food. This picture shows an entire goat being cooked in a pit for 12 hours. They have wrapped the goat in agave leaves which are thick and help the goat retain moisture so as not to dry out. They light a fire in the bottom, add stones on top, then goat is laid on the stones so not over direct fire. They put a metal lid over the pit and light a fire on top of the lid...12 hours later deliciousness!
